Frédéric Cossard Bigotes 2020
The brilliance of Frédéric Cossard as a winemaker can not be overstated. As a fully organic, minimal additions kind of guy, he understands very well that to choose to omit the use of sulfur dioxide, precision and meticulousness is the order of the day. His understanding of cellar hygiene is perhaps owing to his time working with raw milk. His goal is maximise his gorgeously expressive Burgundy fruit, all the while offering clean and fresh wines that will survive not only the cellar, but also the voyage to us across the equator.
The 2020 Bigotes is made from Chardonnay fruit picked from vineyards around the village of Puligny. It's the perfect entry point to experiencing Cossard's wines, as it has the hallmark ripe stone fruit and saline finish of Puligny, without being weighed down with heavy oak. Frédéric has given this one a hefty year long maturation in neutral concrete eggs to really retain that primary fruit character. This wine deserves some fleshy Cod with a lemon beurre blanc sauce.
