The brilliance of Frédéric Cossard as a winemaker can not be overstated. As a fully organic, minimal additions kind of guy, he understands very well that to choose to omit the use of sulfur dioxide, precision and meticulousness is the order of the day. His understanding of cellar hygiene is perhaps owing to his time working with raw milk. His goal is maximise his gorgeously expressive Burgundy fruit, all the while offering clean and fresh wines that will survive not only the cellar, but also the voyage to us across the equator.
Sous Roche is harvested from his estate holdings in Saint-Romain, an estate which he built from the ground up. It shows opulent red cherries, and a piquant spice that keeps the palate fresh. Such complex Pinot Noir as this will benefit from some time in a decanter and some really tasty duck breast with cherry sauce.
