Catherine et Claude Maréchal Bourgogne Côte d’Or Gravel 2019
A fantastic entry into Bourgogne Pinot Noir. Claude Maréchal brings us southern Burgundian fruit, namely Bligny and Pommard, that is elegant and supple. His style, which he learned from his friend and mentor Henri Jayer, is to completely destem the fruit before a gentle maceration. Fermentation is then kicked off with natural yeast. There’s loads of primary fruits – cherries, blackberries which elongates across the palate. Goes together nicely with game, such as rabbit and duck. Maréchal is a small production and the number of theses wines we get each season is quite limited. We’d recommend decanting before serving to really show it’s full potential.
