Fanny Sabre ticks all the boxes when it comes to being a natural wine producer in Burgundy. A young gun, she has smatterings of fruit holdings and her provenience as a wine maker includes includes experience with some of the greats ie. Philippe Pacalet. Plus she runs a chic cafe in the town of Pommard! Her Aligoté is as sought after as her cru Burgundy. Its Chalky, saline and very textured, with white stone fruits to match. Her father chose to plant Aligoté in his precious Pommard land holdings, as opposed to Chardonnay, to make a stand-alone wine. Fanny is now reaping the benefits, as do we. Think grilled fish with Bearnaise sauce.
