The latest release from young wine maker Aaron Fenwick. He’s kept this Chardy back for a year to allow the fruit to find its groove. It’s been whole bunch pressed straight into Barrel for fermentation. A great example of zero intervention wine – clean and crisp with some attractive rounded fruit in the middle. It’s definitely on the zesty citrus spectrum of Chardonnay. If you’re a Chablis drinker and have a bit of goat cheese baked in puff pastry in front of you (cause why wouldn't you?) then I’d be reaching for a glass.
