Christophe et Fils Chablis 1er Cru Mont de Millieu 2021
Tight and elegant Chablis from the right bank of the River Serein. Sebastien Christophe started out with a small portion of Petit-Chablis, which he inherited, slowly building his holding to include a number of 1er Crus and a Grand Cru. The Mont de Millieu has a precise line of acid and gob-smacking fruit. While not a weighty style of Chardonnay, it makes up for it in finesse. Fermentation is done in a mix of stainless steel tanks and old barrels. Try this with some goat cheese baked in puff pastry or some delicate fish with lemon caper butter.
