Fanny Sabre Bourgogne Rouge 2022
Fanny Sabre is one of the most precise and diligent "natural" wine producers, not just in Burgundy, but in the world. She began her career when she inherited four point five hectares back in the year two thousand. She proceeded to work with Burgundy greats such as Philipe Pacalet and applied some learned principles in her own cellar.
For her village level Pinot, she sources small parcels from holdings around Beaune, vinifying and ageing them all separately. Her final blend achieves a balance of fragrant fruit and hints of spicy oak that shows off some clever winemaking. This wine is clean and fresh, while having a deep, moorish visage. A one of a kind burgundy from a one a kind lady.
