This is what ultra-dry Pet Nat is all about. It’s tightly wound and teeming with lemon and green apples, with lively bubbles to top it all off. Winemaking duo Mathieu and Fabien teamed up in 2008 to focus on the production of Pet Nat style wines from the Loire. They manage by hand a small 10 hectare biodynamic plot of very old Chenin Blanc. Minimal additions of sulphur, very much a lo-fi style of sparkling. The kind of thirst quencher you need when you’ve been working up a sweat in the garden on a warm autumn afternoon.
