Deliciously ethereal champagne. Light on its feet but full of florals and candied apples. This style of aperitif Champagne makes you want to eat Foie Gras and oysters. Domaine Piollot is located in the village of Polisot, in the Côte des Bar. Vineyards are biodynamically managed. Fermentation is done in oak vats and some barrels depending on fruit selection, for at least four years before disgorgement.
