The term Saignée as it relates to wine, means to “bleed” the juice from the skin. A slow and gradual process, in this case 72 hours, that results in a deep, intense Rosé style wine. Championed by the Provincial regional style of Tavel Rosé. It will hold up to serious dishes on the table, such as fleshy fish with rich sauce. Think of it as a super chilled Pinot Noir with fresh strawberry and peppery notes. Perfect for summer on the terrace.
