Samuel is first and foremost an exceptional Chablis producer. He began his own project after splitting from the family production Billaud-Simon, in order to establish his own style. This Chardonnay fruit is sourced from the Cote d’Or region of Burgundy, namely Auxerrois and Mâconnais, but he treats it like Chablis. Fruit is gently pressed into stainless steel for fermentation, and the results are fresh and crisp white stone fruits and tangy acid. If you’re looking for a Chablis style wine, and we know how little is available presently, then this is worth a tipple.
