Hervé Souhaut Syrah 2021
Hervé Souhaut is a bit of a lone wolf in the Northern Rhone. His approach revolves around purity of fruit and perfume, which is achieved through minimal intervention, whole bunches and gentle aging in old oak. Unlike any other Shiraz that we have tasted. It’s light, supple and ultra perfumed. The vineyards lay on the bank of the Doux River and just a stones throw from where the region produces some of its blockbuster Shiraz fruit. Whoever said you couldn’t drink Shiraz with fish? Most likely the closest we’ll get to proving that wrong with this example.
