Trousseau from the Jura is such a light and delicate variety that it often doesn't achieve full ripeness to make it to the crusher. However when the sun is really shining over the hillsides of Arbois, Trousseau shines in turn. Alice from l'Octavin sources her fruit from the lieu-dit of Corvées and she chooses to macerate in whole bunches for two months before pressing into neutral fermenters. What she achieves is a kiss of strawberries and rhubarb, with some serious acidity.
