Christophe et Fils Chablis Montée de Tonnerre 1er Cru 2022
This is one of Sebastien Christophe's most pleasurable and accessible Chardonnays to drink. It errs on the riper side of the spectrum, with some pineapple and honey to compliment the classic lemon and jasmine aromas you'd expect from premier cru Chablis. Although it will benefit from a couple years in the cellar, it's open and showing some great fruit expression already. We'd be tempted to bake some scallops on the half-shelf in some butter (as a minimum) to pair with this. Followed by some Trout with Almonds if you haven't already finished the bottle.
